We all know that oily fish are good for us, full of omega 3 and all that, but I'm guessing that a lot of us don't particularly like the taste of cuts such as salmon and tuna, they are just a bit too fishy tasting for many of us. I confess, I'm in the 'I know I should eat it but I don't really like the taste of fish' camp! So I've decided it's about time I figured out a way around my dilemma. I cooked up some Salmon Steaks last night and they were delicious - I marinated them in a combination of citrus flavours, with some coriander, mint, and a hint of chilli. NO fat or oil... was used to cook them - another plus, AND....*drum roll* even my fussy fussy girl child enjoyed her meal (she's apparently decided that salmon tastes like chicken and since she likes chicken she now likes salmon - yep, whatever!) I did present the salmon steaks in a somewhat more swish way than is the norm in this household. I cooked up some Chinese Vegetables and put them in the middle of the plate and stacked the salmon steak on top. (Add a sprig of coriander for garnish). On the side we had Potato Wedges, and Oven Roasted Tomatoes. Delicious :-) If you want to make this as a whole meal, start by marinating the salmon, then sit down and have a couple of glasses of wine while you wait for it to marinate, drag yourself back into the kitchen, and start on the potato wedges. Once they're in the oven, you can probably squeeze in another glass of wine, then head back to the kitchen. Put your salmon steaks in the oven, cook the Chinese Vegetables. While the Vegetables are steaming, put the tomatoes in the oven. Five minutes later, you're ready to serve. Too easy!
