DescriptionDescription  A healthier alternative to Chips, these potato wedges are tasty and use a minimal amount of oil.
InstructionsInstructions  Put a saucepan of water onto the stove to boil. Slice the potatoes into wedges, roughly of the same size so that they cook evenly. Add the potatoes to the boiling water and boil for 3 minutes. Drain the potatoes. Put the potatoes into a large bowl. Drizzle enough olive oil over the potatoes to coat them in the oil. Add salt, pepper, and paprika to taste. Toss the potatoes in the mixture so that they are all evenly coated with the oil and seasoning. Preheat oven to 180 deg celcius. Place your potato wedges in a single layer onto a baking tray. Don't tip the whole bowl onto the tray - you don't need the excess oil to cook them, just use tongs to lift them out of the bowl and put them on the tray. Place in the oven for 20-25 mins until crispy and cooked, turning once during the cooking time. Serve.
NotesNotes  These are a great side dish for lots of recipes, and everybody seems to love them. Because they're thicker than normal sized chips, and they're only coated in a thin layer of olive oil they are healthier than deep fried chips as well. And... if you aren't watching the waistline or cholesterol levels, serve with sour cream and sweet chilli sauce :-)
