We all know that oily fish are good for us, full of omega 3 and all that, but I'm guessing that a lot of us don't particularly like the taste of cuts such as salmon and tuna, they are just a bit too fishy tasting for many of us. I confess, I'm in the 'I know I should eat it but I don't really like the taste of fish' camp! So I've decided it's about time I figured out a way around my dilemma. I cooked up some Salmon Steaks last night and they were delicious - I marinated them in a combination of citrus flavours, with some coriander, mint, and a hint of chilli. NO fat or oil...
It's been a bit cool here in Brisbane at nights lately - no surprise there, it is winter after all :-) Anyway, I had some cooked chicken and some mushrooms in the fridge last night, so I whipped up a delicious Creamy Chicken and Mushroom Pasta.
I have invited some friends around for a BBQ tomorrow afternoon, and I've been sitting here wondering what I'm going to cook. I think I'll make this delicious chicken recipe - I've made it before for guests and it was a HUGE hit!
When I first read the recipe I thought, hmmmm... I don't know about cooking chicken breasts on the BBQ without turning the breasts, trust me though, it works. All the steam gets kept inside the aluminium foil and the chicken cooks beautifully. I usually cook with thigh fillets on the BBQ because I find them to be juicier than breast fillets, but for this recipe - go for the skinless chicken breast fillets; Sensational! If the fillets are huge, then buy half the number of fillets. BBQ
